One Bowl Donut Holes Inspired by Josh Funk's Who Donut?: A Holiday Mystery
Ingredients
¼ cup softened butter
¼ cup granulated sugar
¼ cup brown sugar
1 large egg
½ cup buttermilk
1 tsp vanilla extract
1½ cups all‐purpose flour
1½ tsp baking powder
¼ tsp salt
2 tsp ground cinnamon
For coating: 2 Tbsp melted butter + ¼ cup granulated sugar + 1 tsp ground cinnamon
Directions
1. Preheat your oven to 375 °F (190 °C) and lightly grease a 24-count mini muffin pan.
2. In a large bowl, cream the butter with both sugars. Add the egg, buttermilk, and vanilla, scraping the bowl as needed.
3. Add the flour, baking powder, salt and cinnamon; mix on low just until combined (don’t over-mix).
4. Using a tablespoon, divide the batter into the prepared muffin pan (fill each about 2/3 full). Bake for 8-10 minutes, or until the edges turn lightly browned and the tops spring back when touched.
5. While they’re warm, prepare the coating: melt the butter. In a separate bowl combine sugar + cinnamon. Dip each donut hole in the melted butter, then roll it in the cinnamon-sugar mixture. Set on a wire rack to cool slightly. Enjoy!
