Sandwich Sunday: Sidekick Recipe

Crispy Smashed Potatoes

Serves: 4–6

Ingredients:

2 lbs small yellow potatoes

2 tsp salt, divided

2 tbsp olive oil

1½ tsp garlic powder

¾ tsp onion powder

Black pepper, to taste

Optional: fresh herbs (parsley, chives, dill) or Parmesan

Instructions:

Preheat oven to 425°F and lightly oil a baking sheet.

Boil potatoes with 1 tsp salt until fork-tender, 15–20 min. Drain.

Place potatoes on the sheet and gently smash to ~¼-inch thick.

Drizzle with olive oil and sprinkle with garlic powder, onion powder, remaining salt, and pepper.

Roast 25–35 min until golden and crispy, flipping halfway.

Sprinkle with fresh herbs or Parmesan if desired. Serve hot.
